And then we made homemade english muffins. I'm a huge english muffin fan. A couple years ago on a trip to Kennebunkport we had the most amazing breakfast sandwiches at a little cafe, made with giant homemade english muffins. I've wanted to make them ever since. After we made jam I had to attempt to make english muffins. I used this recipe. They were delicious, and the jam, OMG, so good. My daughter and I tried two different jam recipes, one with pectin (helps the fruit gel) and one without pectin. The one pictured here is without pectin and is by far my favorite. It's almost like a strawberry reduction sauce. The canning process itself was a little stressful and I could not have Little Miss S help with that part. She actually got in trouble a couple times and had to go to her room during the canning process. I had every burner on my stove going at one point and pots boiling over. She did enjoy mashing up the strawberries though, and adding the sugar (a ton of it). That's the beauty of homemade, you control all the ingredients and that is all that was in the jam, strawberries and sugar. Next I'd like to try raspberry.
I hope you all had a nice weekend. This is the big week, the birthday party week. I'm going to try not to stress out, but the weekend weather forecast has me a bit on edge and I have a ton of prepping to do! It's also been a while since I've hosted a group. I'm going to make lists, something I never do, and take deep breaths.

Amber, those look awesome! Did you cook them on just the griddle or also bake them for a bit? I LOVE English muffins and jam. Hope the weather clears up for your party (and for my weekend at the spa :)!)
ReplyDeleteI cooked them in a pan and then I toasted them in the toaster like I would have if I bought some from the store. The recipe made a big enough batch that we will have enough of them for a week. Just pop them in the toaster.
DeleteIt looks so good! I've made jam before, but I cheat--I make the super easy freezer jam. :) I've never made English muffins, though! I'm totally going to try it!

ReplyDeleteAlthough...I remember when Patrick turned 3...we had a big party/bbq with a bounce house, ball pit, pinata...and with at least 40 people all eating dinner...the clouds came in...and we had the most spectacular lightning thunderstorm...we couldn't get in the house fast enough. And yet every year on his birthday since it's all he can talk about...remember the big storm on my third birthday? It all worked out somehow. Great memories...but I'm still hoping for clear blue skies for you!
Homemade jam and english muffins?! You are some kind of domestic goddess. Those are two of my favorite food items, don't you know. No, really, I love toast and jam with something hot to drink on a chilly day.

Oh, and lists are a very good thing. I am a mad list maker. With my horrible momnesia, lists help me keep sane and remember things (so long as I don't forget where I put them). :)
PS~All your photos of your stay at The Parker came out really nice. I'm not a manual reader either, to my detriment.
Jam and homemade English muffins are going to be on my to-do list for sometime very soon! I've done jam before with peaches (the without pectin kind), but maybe I'll get my hands on some strawberries this time and try that.
